It’s white-trash and tasty and a bazillion times healthier then you-know-who’s-muffin.
Tilly McMuffins
Makes 2 sandwiches.
Ingredients:
2 eggs
1-2 tbsp butter/spread
2 oz slice good sharp cheddar
2 hash brown patties (Trader Joes’ makes yummy ones)
2 slices canadian bacon (Unless you’re vegetarian today)
2 english muffins, I like whole wheat!
Throw hashbrown patties on George Foreman grill or just in a skillet. Cook till desired browning. Salt/Pepper them. Fry the eggs in butter or if you’re dieting/lazy, poach ‘em in a microwave egg poacher. I like the yolks cooked. Salt/Pepper again!
Put cheese slice on eggs while hot. Mmm melty!
Throw Canadian bacon in after eggs to give them some crispiness and color. Or don’t. Meat is murder, you know.
Toast your muffins, spread some butter on slices, add egg, meat and just for fun, a hash brown patty. Eat!
